What vitamins and minerals are water soluble, and which ones are not?

I recently started taking some new supplements, and I was curious as to which ones were water soluble and which ones are not because between my different supplements, a lot of the Vitamins and minerals overlap. I’ve heard that if you take too much of certain vitamins and minerals, you can get sick, and I certainly want to avoid that. Can you help? Thanks!

Vitamin B-6, also called pyridoxine, is one of eight water-soluble B Vitamins. Vitamin B6 (pyridoxine) serves as coenzyme and is involved in the metabolism of protein and carbohydrates, the production of insulin and red and white blood cells, and the synthesis of neurotransmitters, enzymes, and prostaglandins. Vitamin B-6 is essential in numerous biochemical pathways involving red blood cells, the immune system, central nervous system function, protein metabolism, homocysteine metabolism, and also the production of energy.
Pyridoxine is an especially important vitamin for maintaining healthy nerve and muscle cells and it aids in the production of DNA and RNA, the body’s genetic material. It is necessary for proper absorption of vitamin B-12 and for the production of red blood cells and cells of the Immune System.

Getting to your main question, Vitamins and minerals are different. Vitamins ("vita" = life and "amine" = containing nitrogen) are organic (containing carbon, which is an element found in all living things) compounds (containing atoms of one or more different elements). Minerals are pure inorganic elements (containing atoms of the same element), meaning they are much simpler in chemical form than vitamins. All vitamins are essential or required by our bodies, whereas only some minerals are essential nutrients. Vitamins are vulnerable to heat, light, and chemical agents, so cooking, food preparation, processing, and storage must be appropriate to preserve vitamins in food. Minerals, on the other hand, are more stable to food preparation, but mineral loss can occur when they are bound to other substances in foods (such as oxalates found in spinach and tea, and phytates found in legumes and grains), making them unavailable for the body to utilize.

What vitamins does meat have that i should replace in my diet?

I stop eating meat and am trying to make sure that I get the right vitamins. I already take a muiltivitamin and fish oil pills every day. Are there any other specific Vitamins I should take?
If so, what do they do?

you need to replace the protein that comes from eating meat. you can eat legumes, nuts, soy, and whole grains.
